Pizza Soup

This one is fun and inexpensive.  Sadly I have no pictures to share but hopefully the title and recipe sound good enough for it to be worth it!


1 Family size can of tomato soup

1/4 tsp Basil

1/4 tsp Oregano

1/4 tsp Garlic

Dash of parsley

1/4 tsp Red Pepper Flakes (optional)

Here comes the fun part… whatever it is you like to put on a pizza!

I used pepperonis cut in half until I felt like it was enough

Sausage crumbles, bacon crumbles, sauteed or raw veggies, or any other number of things can be added.  Note: If you add raw veggies make sure you cook them down a little so they are soft and cooked a bit before you get around to eating them.

Parmesan Cheese


French bread or croutons

Shredded Mozzarella


Pour soup into a large pot and heat on low.  Saute veggies or cook other meats while it heats up.  If you are adding raw veggies add them now.  If you are just doing some pepperoni toss them in and heat until you are at a desirable temperature, about 10 min.  Pour into soup bowls, top with parmesan cheese and enjoy!

Alternative serving:  I have yet to try this so if someone does before me let me know how it goes.  I was thinking of stealing the concept of french onion soup and tossing a slice of French bread or croutons on the top of the soup, topping with mozzarella cheese and broiling in the open for about a minute and a half or until the cheese is melted and a little bit brown.  NOTE: if you do this… please please please make sure it is in an over safe container, preferably a stoneware bowl or corningware and always use an oven mit to remove.  I like to put mine on a pan so its easier to take out of the oven and it catches spills.

I made this and Neil made grilled cheese and it ended up being a great meal and the soup lasted for another day or two.
