I figured I would start this off right with a little something I learned from my mom. My mom has taught me a lot about cooking and still receives random phone calls and messages asking for her help. Here it is, a sweet pumpkin soup reminiscent of pumpkin pie.
Ingredients:
2 c pumpkin puree (I prefer fresh)*
1/4 c milk (any kind will do and add more to taste if needed)
1 tbsp butter
¼ tsp clove
¼ tsp nutmeg
¼ tsp ginger
½ tsp cinnamon
Brown Sugar to taste
Apples Optional
Directions:
All of the spices, milk, and sugar are on an add to taste basis but I tried to give some sort of actual measurement. Some people will like more cinnamon or more sugar than I do. Combine all of this in a pot and heat on low so as to not burn. Serve on a chilly day with a pumpkin muffin and enjoy!
Optional: Add 1/2 a cup of unsweetened apple sauce or throw an older apple in a food processor and add it to the mix. Be careful with sugar in this so as to not make it too sweet.
This has a taste similar to but not nearly as sweet as pumpkin pie. For something fun add some crushed graham cracker to the top!

I don’t strictly use pie pumpkins I use the big jack-o-lanterns as well. They aren’t as sweet but sugar is always an option!
